A Fresh and Elegant Savory Pancake Concept for Elevated Brunch Menus!

A refined savory pancake recipe that balances freshness, creaminess and delicate flavor. The Pancake Complete mixture creates the perfect base for silky avocado purée, premium marinated salmon and a crisp cucumber–apple salad. Ideal for brunch and light lunch.


Ingredients:


For the Pancakes:

1000gr.

900gr.

Water

For the Avocado Purée:

440gr.

Ripe Avocado

350gr.

Apple Juice

100gr.

Fresh Lemon Juice

For the Cucumber-Apple Salad:

1 Fresh Cucumber, finely sliced

1 Green Apple

A few drops of lemon juice

A drizzle of olive oil

Salt & freshly ground pepper

For the Assembly:

Marinated Salmon Slices


Preparation:


Pancakes:

  1. Weigh all ingredients accurately

  2. Mix the Pancake Complete Mixture with the water until smooth and lump-free


Method:


Pancakes:

  1. Lightly grease a hot non-stick pan or crepe maker with oil

  2. Pour one ladle of batter onto the hot surface

  3. Cook until golden on one side, then flip and cook the other side until golden-brown

  4. Repeat with the remaining batter


Avocado Purée:

  1. Blend the avocado, apple juice and lemon juice until smooth and velvety

  2. Adjust seasing if desired

  3. Keep chilled until ready to use


Cucumber-Apple Salad:

  1. Combine the cucumber and the apple

  2. Add lemon juice, olive oil, salt and pepper

  3. Toss gently to maintent freshness and crunch


Assembly:

  1. Spread a generous layer of avocado purée over each pancake

  2. Add slices of marinated salmon and top with the cucumber-apple salad
